My Version of Cherry Empanadas
- 1 can of Cherry Pie Filling
- flour tortillas med or large size
- whipped cream
Mix together cinnamon and sugar on a plate to your prefered taste, I like less cinnamon more sugar. Heat about 1/2 inch of oil in a skillet on med/high heat. Spoon cherry pie filling into center of a tortilla and wrap just like a burrito. Put in skillet seam side down for about 3 mins on each side (just watch closely) immediately take empanada from skillet and roll in the sugar cinnamon mix you made, it sticks because it’s hot and has an oil coating on it. Put on plate top with whipped cream, cherry and we put ice cream with it.
Husbands Review: Loved the taste but HATED seeing me continually get burned while oil splattered everywhere!
My Review: I need to get better at using oil but the actual empanada was super good, the pie filling i got was a little bit tart so next time i am thinking of using apple pie filling!!
